General Manager

General Manager Under the direction of the District Manager, the General Manager is responsible for attaining the sale and profit targets established for Buona Restaurant and Buona Catering Retail. Duties include achieving sales targets, recognizing all revenue areas and developing strategies to impact sales, enforcement and execution of the marketing plan, managing and controlling direct expenses including direct labor, food cost variance, repairs and maintenance, discounts, and other direct expenses. The General Manager is also responsible for the selection, retention, supervision, and training of all hourly employees, conducting quarterly reviews, adhering to established training programs, determining advancement or termination, and developing employees into shift managers. Weekly meetings with Co-Managers to discuss opportunities, sales building, staffing levels, labor cost, food cost variance/efficiencies, cash short/over, building/equipment repair, enforcement of policies, procedures, and controls, evaluating systems and procedures and providing feedback to the District Manager, phone accessibility for all store emergencies, implementing and communicating advertising and marketing plan opportunities, and giving feedback to the District Manager on human resource and training material opportunities.
