Regional Director of Culinary | Full Service Restaurants
Noble's Restaurants - NC
Description:
Success in this role requires current or recent culinary leadership experience in full service restaurants. We are looking for a culinary leader who understands the pace, pressure, standards, and team dynamics of active restaurant operations.
The strongest candidates will bring like for like experience in chef driven, scratch, high volume, polished casual, upscale casual, or full service restaurant environments. This background is important because the role directly supports Executive Chefs, Sous Chefs, kitchen teams, menu execution, service standards, food cost, labor, and overall culinary performance across multiple restaurants.
This is a hands on restaurant leadership role for someone who can step into kitchens, assess execution, coach leaders in real time, and help teams improve through direct involvement.
About Noble Food and Pursuits
Noble Food and Pursuits is a chef driven hospitality group based in Charlotte, North Carolina. Our restaurants are rooted in craftsmanship, genuine hospitality, quality, and team development. Across concepts including Rooster’s Wood Fired Kitchen, The Jimmy, Noble Smoke, and Brasserie Copain, we are focused on building strong teams, developing great leaders, and creating memorable guest experiences.
We are seeking a Regional Director of Culinary to lead culinary performance across our northern region, including Davidson, Winston Salem, and Blowing Rock as the region continues to expand. This role reports directly to the Chief Culinary Officer and provides direct leadership to Executive Chefs across multiple full service restaurant concepts.
This is a high impact regional leadership role for someone who can build teams, drive standards, and scale culinary excellence across a diverse portfolio of restaurants. The right candidate must be comfortable leading from the front, coaching chefs directly, and holding teams accountable to the standards required across our group.
What This Role Requires
This is not a sit back and oversee from a distance position. This is a hands on regional culinary leadership role for someone who is fully capable of stepping into kitchens, assessing operations, leading service when needed, and setting the standard through action.
You will be expected to train Executive Chefs directly, strengthen their leadership, and hold them accountable to the level of performance required across our group. That means real coaching in real time, not just check ins and direction from the sidelines.
This role requires someone who can quickly identify gaps, refine systems, improve execution, and help teams raise their level through direct involvement. You will also play an active role in menu development, seasonal changes, recipe refinement, and culinary initiatives across the region.
If you are looking for a purely administrative leadership role, this is not the right fit.
What You’ll Do:
Lead culinary performance across multiple full service restaurant properties within the northern region
Provide direct leadership, coaching, and development to Executive Chefs

Drive consistency in execution while respecting the identity and integrity of each concept
Partner with restaurant leadership to strengthen overall performance
Support recruiting, onboarding, and long term development of BOH talent
Create a culture of accountability, ownership, and continuous improvement
Oversee menu execution, recipe standards, portioning, presentation, and culinary initiatives
Conduct regular kitchen visits to assess quality, execution, cleanliness, organization, and team performance
Identify operational gaps quickly and implement practical solutions
Maintain high standards for food safety, sanitation, and operational discipline
Partner on financial performance across the region, including food cost, labor, inventory, purchasing, and waste control
Collaborate closely with the Chief Culinary Officer on regional strategy, growth, and company wide culinary initiatives
Support growth in Davidson, Winston Salem, and Blowing Rock as the region continues to develop
